“This has to be the quickest, heartiest and cheapest meal to feed the hungry hordes…”
When you pull into camp after a big day of pulling the van or driving in the 4×4, you want something quick, easy and hearty to feed the beasts!!! You can cook this in a camp oven or on the stove top and the smell will have the campers coming from miles, lucky it’s quick to cook!!!
Serves 4
Ingredients:
1 large onion – $0.20
4 cloves of garlic – $0.10
400g Seafood Marinara mix – $4
1 tin (400ml) coconut cream – $0.80
1 cup of Jasmine rice – $1.00
4 slices of crusty bread – $0.20
2 teaspoons of curry powder – $0.05
1.5 cups of water
Salt & pepper to taste
Total Cost – $6.35. Total cost per person – $ 1.59
Total time to prep, cook and serve meal – 20 minutes!!!
Method:
Rice
- Get the rice started first by boiling 1 cup of rice to 1.5 cups of water, lower the heat, cover and simmer for 12-15 minutes.
- Remove from heat and stand covered for 5-10 minutes then serve.
Seafood and Sauce
Pre heat the pan with some butter or oil in it, place onions and garlic in and stir until onions become translucent.
Throw in the seafood mix and stir and let cook for approx 5 minutes stirring occasionally.
Pour in coconut cream and stir until mixed in with seafood. Add 2 teaspoons of curry powder and stir well. Allow to simmer for 5-10 minutes.
Slice crusty bread and cook over fire, or in the toaster.
Add rice to bowls and top with seafood and sauce, crusty bread on the side.
This is a great quick meal to have ready in minutes after a big day of touring!
